Ingredients

Quantity Ingredient
¾ cup Dark rum; (or sunbstitute unfiltered apple cider)
cup Brown sugar
3 tablespoons Kosher salt
teaspoon Pickling spice
1 teaspoon Lightly crushed anise seed
1 teaspoon Lightly crushed dill seed

Directions

marinate the fish in the refrigerator for 3-4 hours. Remove and let sit on a rack at room temp for ½ hour to form a skin.

Smoke, skin side down (indirect heat) for 1½ - 2 hours. It's so good, it'll convert non- filsh lovers.
