Vidalia onion relish

Ingredients

2 | pounds | Sweet onions (Vidalias), chopped |
2 | eaches | Stalks celery, sliced |
1 | each | Sweet red pepper, chopped |
1 | tablespoon | Butter or margarine, melted |
¾ | cup | Cider vinegar |
¼ | cup | Water |
2 | tablespoons | Brown sugar |
1 | teaspoon | Celery seeds |
¼ | teaspoon | Salt |
Directions
Saute onions, celery, and red pepper in butter in a small Dutch oven 15 minutes or until tender. Add vinegar and the remaining ingredients to the mixture. Bring to a boil; reduce heat and simmer uncovered 20 minutes. Store in refrigerator.
Serve chilled or at room temperature.
