Vidalia onion relish

Ingredients

Quantity Ingredient
2 pounds Sweet onions (Vidalias), chopped
2 eaches Stalks celery, sliced
1 each Sweet red pepper, chopped
1 tablespoon Butter or margarine, melted
¾ cup Cider vinegar
¼ cup Water
2 tablespoons Brown sugar
1 teaspoon Celery seeds
¼ teaspoon Salt

Directions

Saute onions, celery, and red pepper in butter in a small Dutch oven 15 minutes or until tender. Add vinegar and the remaining ingredients to the mixture. Bring to a boil; reduce heat and simmer uncovered 20 minutes. Store in refrigerator.

Serve chilled or at room temperature.
