West indian marinade

2 1/2 cups

Ingredients

Quantity Ingredient
1 White Onion, Finely Chopped
1 Green Pepper, Seeded and Finely Chopped
1 Scotch Bonnet Pepper, Seeded and Finely Chopped
2 Cloves Garlic, Minced
1 teaspoon Salt
1 teaspoon Freshly Ground Black Pepper
½ cup Chicken Stock
½ cup White Wine Vinegar
Juice of One Lime
1 teaspoon Sweet Paprika
1 teaspoon Dried Oregano
2 Sprigs Fresh Coriander, Finely Chopped
2 Sprigs Fresh Parsley, Finely Chopped

Directions

In a large bowl, combine all the ingredients to form a paste. Cover and refrigerate.
