Whipped mashed potato with goat's cheese and bacon

1 pounds Potatoes
Salt and freshly ground black pepper
2 tablespoons Extra virgin olive oil
6 ounces Goat's cheese; softest available
3 ounces Lean bacon; finely diced
1 ounce Butter
1 Clove garlic; peeled and crushed
2 tablespoons Snipped chives

Directions

1 Cook the potatoes in boiling salted water, drain and return to the pan on a low heat. Mash to a puree. Heat the butter in a frying pan, add the bacon, garlic and chives, and cook with the bacon till crisp.

2 Add the olive oil and goat's cheese to the pureed potatoes and, using a wooden spoon, beat until light and fluffy. Season with salt and pepper, mix in the bacon mixture and serve. Converted by MC_Buster.
