White bean and red pepper spread

Ingredients

Quantity Ingredient
16 ounces White beans; 1 1/2 cups cooked
cup Red peppers; roasted
1 Clove garlic; minced
2 tablespoons Fresh lemon juice; up to 3
2 tablespoons Fresh parsley; chopped
Salt and pepper to taste

Directions

1. Combine beans, red pepper, garlic and lemon juice in a food processor.

2. Blend until smooth.

3. Stir in parsley, salt and pepper.

Variations: Use roasted garlic. Substitute basil or dill for parsley.
