White bean and red pepper spread

Ingredients

16 | ounces | White beans; 1 1/2 cups cooked |
⅓ | cup | Red peppers; roasted |
1 | Clove garlic; minced | |
2 | tablespoons | Fresh lemon juice; up to 3 |
2 | tablespoons | Fresh parsley; chopped |
Salt and pepper to taste |
Directions
1. Combine beans, red pepper, garlic and lemon juice in a food processor.
2. Blend until smooth.
3. Stir in parsley, salt and pepper.
Variations: Use roasted garlic. Substitute basil or dill for parsley.
