Winter broccoli and cinnamon soup

Ingredients

1 tablespoon Butter or margarine
1 large Onion; chopped
2 Cloves garlic; crushed
1 pounds Broccoli; roughly chopped
2 tablespoons Soya sauce
pint Marigold Vegetable Bouillon
Seasoning
2 teaspoons Cinnamon
Cream to serve; (optional)

Directions

1. Melt the butter in a pan, add the onion and garlic and saut‚ until transparent.

2. Add the broccoli, soya sauce, stock and seasoning and simmer for 45 minutes.

3. Allow to cool a little before liquidising until smooth. Return to the pan, stir in the cinnamon and reheat gently, then serve.
