Zucchini and hearts of palm salad

Ingredients

Quantity Ingredient
2 cans (14-oz) hearts of palm; drained
3 smalls Zucchini
1 small Head Bibb lettuce
Oil and vinegar dressing or French vinaigrette
Pimiento slices (optional)

Directions

Split hearts of palm lengthwise. Slice zucchini into thin, lengthwise slices. Place lettuce leaf on salad plate. Alternate slices of hearts of palm with zucchini. Garnish with pimiento (Optional). Serve with favorite dressing. Yield: 4 servings.
