Hearts of palm and zucchini salad

Ingredients

Quantity Ingredient
1 can Hearts of palm (150z); drain and dice
1 clove Garlic
2 tablespoons Jalapeno vinegar*
½ teaspoon Salt
½ teaspoon Pepper
6 tablespoons Olive oil
1 medium Zucchini; diced
1 medium Tomato; diced
½ Sweet onion; diced

Directions

Combine all the ingredients and refrigerate for at least 2 hours. Spoon onto a bed of mixed lettuce.
