20-minute white bean chili

1 | pounds | Ground turkey |
1 | can | Stewed tomatoes; (14 1/2 ounce) |
1 | cup | Chicken broth or low sodium chicken broth |
½ | cup | Grey PouponĀ® Dijon Mustard |
1 | tablespoon | Chili powder |
⅛ | teaspoon | Ground red pepper; (up to 1/4) |
1 | can | Cannellini beans (15 ounce); drained and rinsed |
1 | can | Corn (8 ounce); drained |
Tortilla chips; shredded cheddar cheese, and | ||
Cilantro; optional |
Directions
In 3-quart saucepan, over medium-high heat, sauté onions and garlic in oil until tender. Add turkey; cook until done, stirring occasionally to break up meat. Drain. Stir in tomatoes, chicken broth, mustard, chili powder and pepper. Heat to a boil; reduce heat. Simmer for 10 minutes. Stir in beans and corn cook for 5 minutes. Top with tortilla chips, shredded cheese and cilantro, if desired.
