Apricot glazed sweet potatoes

6 | eaches | Medium sweet potatoes, cooked and sliced |
1 | can | Apricots(16oz), reserve 1 cup syrup |
½ | cup | Pecans |
1½ | tablespoon | Cornstarch |
¼ | teaspoon | Salt |
⅛ | teaspoon | Cinnamon |
1 | teaspoon | Shredded orange peel |
2 | tablespoons | Butter |
¼ | cup | Brown sugar |
Directions
Arrange sweet potatoes in a buttered 9x13 inch baking dish. Combine brown sugar, cornstarch, salt, cinnamon, orange peel and butter; add apricot juice and bring to a boil. Remove from heat and pour over sweet potatoes. Arrange apricots and pecans over sweet potatoes. Bake at 350 degrees for 25 minutes.
