Basic marinade for barbecued spareribs

Ingredients

1 | Clove garlic | |
3 | slices | Fresh ginger root |
1 | cup | Soy sauce |
1 | tablespoon | Sugar |
1 | tablespoon | Sherry |
Directions
1. Crush garlic and ginger root; then combine with remaining ingredients.
2. Add to spareribs and marinate.
VARIATIONS:
1. Rub the spareribs first with 1 teaspoon salt and 1 teaspoon sugar. Let stand 1 hour; then marinate.
2. Reduce the soy sauce to ¾ cup; increase the sherry to ¼ cup.
3. Reduce the sugar to 1 teaspoon and add ½ teaspoon Five Spices. For the sherry, substitute brandy.
4. Add 2 tablespoons honey and 2 tablespoons of either hoisin sauce or applesauce.
