Soy-sugar marinade for bbq spareribs

Ingredients
Quantity | Ingredient | |

1 | Clove garlic | |
2 | slices | Fresh ginger root |
¼ | cup | Soy sauce |
1 | tablespoon | Sugar |
1 | teaspoon | Salt |
1 | dash | Pepper |
Directions
1. Mince garlic and ginger root; then combine with remaining ingredients.
2. Rub mixture over spareribs. Let stand 1 hour; then roast.
VARIATIONS:
1. For the regular soy sauce, substitute 5 tablespoons light soy sauce and 1-½ teaspoons heavy soy sauce.
2. Omit the ginger root. Substitute a second garlic clove. Add 2 tablespoons sherry and ½ teaspoon each of ground cinnamon, anise and cloves. Omit the pepper.
3. Add 2 teaspoons brown bean sauce, mashed; and ½ teaspoon ground cinnamon.
