Basic white sauce (low-fat)

1 cup Water
¼ cup Instant nonfat dry milk powder
1 tablespoon Margarine
2 tablespoons All-purpose flour
teaspoon Whit pepper

Directions

Combine water and milk powder; stir well. Melt margarine in a heavy saucepan over medium heat. Stir in the flour and pepper, and cook for 1 minute, stirring constantly with a whisk. Gradually add the milk, stirring constantly. Cook 10 minutes or until thickened and bubbly.

Variations: ~Sherry-Nutmeg Sauce: Add 1 tbs grated Parmesan cheese, 1 tbs dry sherry, and ⅛ tsp ground nutmeg to Basic White Sauce; stir well. Serve with vegetables or pasta. ~Cheese Sauce: Add « cup shredded reduced-fat sharp cheddar cheese, ¬ tsp dry mustard, a dash of ground red pepper to Basic White Sauce; cook over low heat until the cheese melts, stirring constantly. Serve with vegetables.

~Mushroom Sauce: Saut‚ « cup of chopped mushrooms in vegetable cooking spray for about 1 minute. Add the mushrooms, 1 tsp dried tarragon and ⅛ tsp salt to Basic White Sauce; stir well.
