Black bean & rice salad (thomas)

Ingredients

Quantity Ingredient
2 cups Cooked or canned black beans (rinse & drained canned)
2 cups Cooked rice
cup Fresh cilantro
¼ cup Lime juice
¾ cup Oil
½ cup Chopped onion
2 Garlic cloves; crushed
Salt
Freshly ground black pepper

Directions

Mix the beans, rice, and cilantro together in a bowl. Place the lime juice in a small bowl and whisk in the oil. Add the onion and garlic and toss with the rice and beans. Add salt and pepper to taste.
