Black bean & rice salad (thomas)

2 | cups | Cooked or canned black beans (rinse & drained canned) |
2 | cups | Cooked rice |
1½ | cup | Fresh cilantro |
¼ | cup | Lime juice |
¾ | cup | Oil |
½ | cup | Chopped onion |
2 | Garlic cloves; crushed | |
Salt | ||
Freshly ground black pepper |
Directions
Mix the beans, rice, and cilantro together in a bowl. Place the lime juice in a small bowl and whisk in the oil. Add the onion and garlic and toss with the rice and beans. Add salt and pepper to taste.
