Description:

A cool treat that's also a breeze to make.

Instructions:

Peel, pit, and dice the avocado and put it in a small bowl. Pour the lime juice over and toss to evenly coat the avocado.

In a large bowl, combine the rice, drained beans, green onions, cilantro, olive oil, salt and pepper. Stir to evenly mix, add the avocado and stir gently to incorporate.
