Black bean chili salad

Ingredients

Quantity Ingredient
¼ cup Red wine vinegar
2 tablespoons Vegetable oil
½ teaspoon Chili powder
¼ teaspoon Ground cumin
1 Clove garlic; crushed
1 cup Frozen whole kernel corn; thawed and drained
1 cup Jicima; diced
¾ cup Tomato; seeded and chopped
2 Green onions; sliced
¼ cup Fresh cilantro; chopped
2 cans Black beans; cooked, rinsed and drained

Directions

Combine vinegar, oil, seasonings and garlic in a large glass or plastic bowl. Stir in remaining ingredients.
