Black beans on rice

2 cups Water
1 medium Green pepper; chopped
1 small Onion; chopped
½ Cl Garlic; chopped
1 tablespoon Olive oil
½ teaspoon Salt
1 cup Rice
2 cups Water
½ cup Cheese; grated

In a saucepan, brown green pepper, onion, and garlic in the oil over low heat for about 15 minutes. Combine with beans; add the salt and cook until beans are tender and the liquid is thick, about 1 hour. Meanwhile, cook rice in the water as directed on package, about 40 to 45 minutes or until tender. Serve the beans over the rice and sprinkle cheese on top.
