Ingredients

| 2 | pounds | Lean pork |
| 1 | large | Onion; chopped |
| 2 | pounds | Potatoes; grated |
| 2 | tablespoons | Salt |
| ½ | teaspoon | Pepper |
| 1 | teaspoon | Allspice |
| ½ | teaspoon | Cayenne and other spices to taste |
| Sausage casings | ||
Directions
Grind together all the meats with the onion. Next mix the potatoes with the meats. Add spices and mix thoroughly.
Prepare as for Caribou Sausage #1.
