Carrot salad with apples and cinnamon

Ingredients

Quantity Ingredient
4 eaches Carrots, thinly sliced (2 cups)
2 eaches Apples, peeled and coarsely chopped
1 tablespoon Frozen apple juice concentrate
3 tablespoons Fresh lemon juice
1 teaspoon Parsley
½ teaspoon Cinnamon

Directions

Toss all ingredients together and chill. Serve on lettuce leaves.
