Cashew nut & tofu pate

Ingredients

Quantity Ingredient
1 tablespoon Olive oil
1 small Onion, diced
1 small Garlic clove, chopped
4 ounces Cashews, toasted & ground
6 ounces Tofu, drained
4 tablespoons White wine -=OR=- water
2 tablespoons Parsley, chopped
Salt, to taste

Directions

Heat the oil in a shallow skillet & saute the onion & garlic until softened, about 5 minutes. Add this to the nuts in a mixing bowl.

Mash in the tofu. Stir in the wine or water, parsley & salt. Press the pate into indivdual ramekins, smooth the top of the mixture & serve.
