Cheese and onion potatoes

¼ cup Butter or margarine
4 mediums Red potatoes -- sliced 1/4\" thick, unpeeled
2 tablespoons Dried onions -- minced
1 dash Pepper
cup Shredded cheddar cheese
Chopped parsley -- fresh

Directions

In a skillet, melt butter over med.-high heat. Add potatoes, onion and pepper; toss to coat. Cover and cook, stirring occasionally, until potatoes are tender about 10 min. Uncover; cook until potatoes are browned, about 5-7 min. Top with cheese. Cover and remove from the heat; let stand for several minutes. sprinkle with parsley before serving. Yield: 4 servings.
