Chicken in garlic and oil ^

Ingredients

Quantity Ingredient
½ cup Olive oil
3 pounds Chicken, cut in serving pieces
4 mediums Potatoes, peeled and cut in
1/2\" wedges
6 mediums Carrots, julienned
1 medium Onion, very thinly sliced
2 cloves Garlic, chopped
1 Lemon, juice of
Salt and pepper to taste

Directions

Preheat oven to 350F. Pour olive oil in bottom of a 14x10x2½" pan or other large roasting pan. Dip chicken pieces into oil, turning to coat. Turn chicken skin side up. Arrange potatoes, carrots and onions around chicken. Sprinkle garlic and lemon juice on top. Season with salt and pepper. Bake for 1 hour, basting every 15 minutes. Remove from oven and serve. 4 servings.
