Chicken in garlic and oil ^

3 | pounds | Chicken, cut in serving pieces |
4 | mediums | Potatoes, peeled and cut in |
1/2\" wedges | ||
6 | mediums | Carrots, julienned |
1 | medium | Onion, very thinly sliced |
2 | cloves | Garlic, chopped |
1 | Lemon, juice of | |
Salt and pepper to taste |
Directions
Preheat oven to 350F. Pour olive oil in bottom of a 14x10x2½" pan or other large roasting pan. Dip chicken pieces into oil, turning to coat. Turn chicken skin side up. Arrange potatoes, carrots and onions around chicken. Sprinkle garlic and lemon juice on top. Season with salt and pepper. Bake for 1 hour, basting every 15 minutes. Remove from oven and serve. 4 servings.
