Chicken taco rice

1 | pounds | Chicken breasts; boneless & cut into strips |
2 | tablespoons | Oil |
14 | ounces | Chicken broth |
8 | ounces | Tomato sauce |
1 | pack | Taco seasoning mix |
12 | ounces | Corn; drained |
1 | medium | Green pepper; cut into strip |
1½ | cup | Minute Rice |
½ | cup | Cheddar cheese; shredded |
Tortilla chips | ||
Sour cream |
Directions
Cook and stir chicken in hot oil until lightly browned. Add broth, tomato sauce and seasoning mix. Bring to a boil. Reduce heat, cover and simmer 5 minutes. Add corn and red pepper. Bring to a full boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes.
