Chicken taco rice

Ingredients

Quantity Ingredient
1 pounds Chicken breasts; boneless & cut into strips
2 tablespoons Oil
14 ounces Chicken broth
8 ounces Tomato sauce
1 pack Taco seasoning mix
12 ounces Corn; drained
1 medium Green pepper; cut into strip
cup Minute Rice
½ cup Cheddar cheese; shredded
Tortilla chips
Sour cream

Directions

Cook and stir chicken in hot oil until lightly browned. Add broth, tomato sauce and seasoning mix. Bring to a boil. Reduce heat, cover and simmer 5 minutes. Add corn and red pepper. Bring to a full boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes.
