Chinese style baked trout

Ingredients

2 teaspoons Grated ginger root
1 clove Garlic; minced
2 tablespoons Dry sherry
2 tablespoons Soy sauce
3 tablespoons Water
1 teaspoon Brown sugar
4 Lake trout or salmon steaks
1 tablespoon Vegetable oil; divided
4 Green onions; chopped
8 Snow peas; sliced on the diagonal

Directions

Preheat oven to 375F. Mix ginger root, garlic, sherry, soy sauce, water and sugar in a small bowl for sauce; set aside. Place fish in a well oiled baking dish. Pour sauce over fish. Cover and bake 20 min. until fish turns opaque. Meanwhile stir fry the snow peas in a little oil. Remove sauce from the baking dish; set aside.

Broil fish 3-4 minutes until crispy. Pour sauce over fish and garnish with pea pods and chopped scallions.
