Chopped salad with fresh corn

Ingredients

Quantity Ingredient
½ cup Green beans -- chopped
½ cup Cucumber -- peeled and
Diced
1 cup Tomatoes -- diced
1 teaspoon Capers -- drained
½ cup Red bell pepper -- seeded
And diced
½ cup Fresh corn kernels --
Cooked
¼ cup Vinaigrette -- low fat
Salt and pepper -- to taste

Directions

Blanch green beans in boiling water for 30 seconds. Drain well and place in large bowl. Toss with cucumber, tomatoes, capers, sweet red pepper, corn, dressing, and salt and pepper to taste. Cover and refrigerate one hour.

Adjust seasonings.
