Fresh corn salad

Ingredients

Quantity Ingredient
3 cups Corn kernels; steamed 10 minutes
1 cup Bell pepper, red; chopped
1 cup Fennel; chopped; steamed 15 to 20 minutes
1 tablespoon Coriander, fresh; finely chopped
2 tablespoons Parsley, fresh; finely chopped
2 tablespoons Olive oil, extra virgin
2 tablespoons Vinegar, apple cider
¼ teaspoon Salt
Black pepper

Directions

Combine all of the ingredients in a large bowl, toss, and serve cold or at room temperature.

Yield: 2 servings
