2 | cups | Low-cal cranberry juice cocktail |

1 | Envelope low calorie lime flavored gelatin; (4 serving) | |
2 | cups | Boiling water |
3 | cups | Unsweetened pineapple juice |
1 | Envelope from a 2 1/2 oz. | |
1 | pack | Low-cal dessert topping mix |
12 | Vanilla wafers; crushed |
Directions
Soften 1 envelope gelatin in cranberry juice. Add 1 tablespoon sugar. Stir over low heat until dissolved. Pour into 8 x 8 x 2-inch or 9 x 5 x 3-inch pan; chill until firm. Dissolve lime gelatin in boiling water. Pour into another pan of same size; chill until firm.
Soften remaining unflavored gelatin in pineapple juice. Add remaining 2 tablespoons sugar. Dissolve over low heat. Chill until partially set.
Prepare topping as directed on package; fold into pineapple gelatin. Cut cranberry and lime gelatin into ½-inch squares. Reserve 1 cup cubes. Fold remaining cubes into topping mixture. Sprinkle wafer crumbs in bottom of 8 x 8 x 2-inch pan. Pour filling over. Chill until firm. Top with reserved cubes. Serves 9; 132 calories per serving.
