4 | cups | Diced cooked chicken breast |
1 | Cucumber; unpeeled and diced | |
⅓ | cup | Chopped red onion |
⅔ | cup | Chopped dill pickles |
4 | Celery stalks; sliced | |
8 | cups | Mixed salad greens |
Directions
Taken from the cookbook "365 Easy One Dish Meals" {These are the 3 recipes that I have prepared, and I recommend them for any picnic, church luncheon, or just a quick and light supper.} In a large bowl, combine vinegar, mustard, Dijon mustard, garlic, oil, salt and pepper. Mix well. Add chicken, cucumber, red onion, pickles, and celery. Toss to coat with dressing. Refrigerate at least 2 hours. Serve on salad greens.
