Chunky chicken mustard salad

¼ cup Red wine vinegar
cup Prepared mustard
1 tablespoon Dijon mustard
1 Garlic clove; minced
½ cup Vegetable oil
¼ teaspoon Each salt and pepper
4 cups Diced cooked chicken breast
1 Cucumber; unpeeled and diced
cup Chopped red onion
cup Chopped dill pickles
4 Celery stalks; sliced
8 cups Mixed salad greens

Directions

Taken from the cookbook "365 Easy One Dish Meals" {These are the 3 recipes that I have prepared, and I recommend them for any picnic, church luncheon, or just a quick and light supper.} In a large bowl, combine vinegar, mustard, Dijon mustard, garlic, oil, salt and pepper. Mix well. Add chicken, cucumber, red onion, pickles, and celery. Toss to coat with dressing. Refrigerate at least 2 hours. Serve on salad greens.
