Cinnamon yam waffles

Ingredients

Quantity Ingredient
2 cups All-purpose flour; sifted
3 teaspoons Baking powder
1 teaspoon Salt
¼ teaspoon Cinnamon
3 Eggs; separated
cup Milk
¾ cup Louisiana yams; cooked and mashed
¼ cup Shortening; melted
cup Walnuts; chopped

Directions

Sift flour, baking powder, salt and cinnamon together. Beat egg yolks well; add milk and yams and beat until blended. Add to sifted ingredients and mix well. Add melted shortening and mix well. Beat egg whites until stiff but not dry; fold into yam mixture. Pour batter on preheated waffle iron and sprinkle with nuts. Bake about 5 5o 7 minutes or until done.
