Cinnamon yam muffins

Ingredients

Quantity Ingredient
¾ cup Louisiana yams; cooked and mashed
¾ cup Milk
1 teaspoon Grated orange peel
1 pack (8 1/2 oz) muffin mix
1 teaspoon Cinnamon
1 tablespoon Sugar

Directions

Combine yams, milk and orange rind; blend well. Add yam mixture to muffin mix and mix only until ingredients are combined. Fill greased 2-inch muffin pans ½ to ⅔ full. Combine cinnamon and sugar; mix well. Sprinkle over batter. Bake in hot oven (400 degrees) 20 to 25 minutes, or until done.
