Cod with warm tomato salsa from lhj

Ingredients

1 large Tomato; cut into 1/2-inch dice
1 tablespoon Fresh lime juice
1 teaspoon Minced garlic
teaspoon Chili powder
½ teaspoon Cumin
½ teaspoon Salt
¼ teaspoon Oregano
¼ teaspoon Freshly ground pepper
4 Pieces cod or halibut fillets; 1 1/2 lbs.
2 teaspoons Vegetable oil
1 tablespoon Chopped fresh cilantro
8 Flour tortillas; heated
Lime wedges; for garnish

Directions

1. Make salsa: Combine tomato, lime juice and garlic in medium bowl. Set aside.

2. Combine chili powder, cumin, salt, oregano and pepper in small bowl. Rub mixture on both sides of fish.

3. Heat oil in large nonstick skillet over medium-high heat. Add fish and cook until just opaque in center, 3 to 4 minutes per side. Transfer to platter; keep warm. Add salsa to pan; cook, stirring, 1 minute. Pour over fish; sprinkle with cilantro.

Serve with tortillas and lime.
