Codfish fluff

1 | Box (2 oz) shredded salt cod | |
2 | Eggs, well beaten | |
1 | tablespoon | Dried parsley flakes |
1 | pack | (5 1/2 oz) onion-flavor instant mashed potato, prepared |
Crisp bacon, crumbled, or canned, or canned-onion rings |
Directions
Soak cod in 2 cups cold water about 3 minutes. Drain well, squeezing out excess liquid with back of spoon. Add fish, eggs and parsley to prepared potato. Pour into greased preheated shallow 1½ quart casserole. Top with bacon. Bake in preheated moderate oven (350F) about 35 minutes. Place piece of foil over top if bacon or onion rings brown too quickly. Makes 6 servings Typed by cjhartlin@...
