Cream filled seafood puffs

¾ | cup | Water |
6 | tablespoons | Butter |
1 | cup | Flour |
2 | cups | Cooked flaked fish |
4 | Eggs | |
1 | cup | Heavy cream |
1 | pinch | Cayenne |
Directions
In a saucepan heat water & butter to boiling point. When the butter is melted blend in flour. Beat the batter to a paste & remove from heat as soon as it forms a ball. Blend in flaked fish. Blend in the eggs one at a time, beating well until a thick batter is formed. Use 2 tsp. to form 1" balls. Place on a baking sheet & bake for 15 minutes in 400 oven. Then lower temperature to 350, for another 15 minutes until puffs are golden brown. Cool slightly. Whip the cream & cayenne until fairly stiff. Spoon the cream mixture into a kitchen syringe & inject each puff with about 1 tsp. of the spicy cream.
