Crunchy apple rings

½ cup Flour
½ teaspoon Baking powder
½ teaspoon Cinnamon
¼ teaspoon Salt
teaspoon Nutmeg
1 Egg; separated
2 tablespoons Sugar
cup Milk
2 Peeled apples; cored and sliced in thin rings
4 cups Corn or Rice Chex; crushed to 1 3/4 cups
Confctioners sugar

Directions

Sift together flour, baking powder, salt and spices. Set aside. Beat egg white until foamy. Add sugar. Beat until stiff but not dry. Set aside. Beat yolk and milk. Blend in dry ingredients. Fold in whites. Dip apple slice in batter. Drain thoroughly. Coat with Chex crumbs. Fry about 2 minutes in ½ inch hot oil, turning once. Drain on absorbent paper. Dust with confectioners sugar. Serve immediately. Makes about 20. MAY BE FROZEN: To thaw, heat unwrapped in 400 oven 10 minutes. Turn once.
