Crunchy spiced maple caramel apple

4 Large; crisp apples such as Granny Smith, Idared, winesap, Empire, Gala or Crispin, well chilled
4 Thick wooden skewers
1 Recipe maple caramel; recipe follows
1 Recipe glazed spiced pecans; recipe follows

Directions

Preparation time: 20 minutes Yield: 4 apples 1. Insert wooden skewer firmly into stem end of each apple. Spoon warm maple caramel from double boiler over apples, covering evenly.

2. Allow caramel to set a few minutes. When it no longer drips or runs, roll apples in glazed spiced pecans. Stick handles into a thick Styrofoam block to hold apples upright until ready to serve.
