1½ | pounds | Clarified butter |
2 | pounds | Crustacean shells |
Directions
1. simmer together for 2 - 3 hours.
2. Strain through a strainer to get the shells, then strain a second time through cheesecloth.
NOTES : Keeps well in ice box, use for making roux for "seafood" soups or any way you like!
