pounds Clarified butter
2 pounds Crustacean shells

Directions

1. simmer together for 2 - 3 hours.

2. Strain through a strainer to get the shells, then strain a second time through cheesecloth.

NOTES : Keeps well in ice box, use for making roux for "seafood" soups or any way you like!
