Ingredients

Quantity Ingredient
9 Hard-boiled eggs -- peel
Shell
3 Scallions -- finely chopped
12 ounces Cn tuna-drained and flaked
teaspoon Dry mustard
¾ cup Soy sauce
1 tablespoon Sesame or peanut oil
teaspoon Lemon juice
Salt and freshly ground
Black pepper
Paprika

Directions

Slice eggs in half, lengthwise. Remove hardened yolks to a mixing bowl. Add scallions, tuna, mustard, soy sauce, oil, lemon juice, and salt and pepper to taste. Mix well. Fill egg white halves with tuna/egg yolk mixture. Sprinkle tops with paprika. Note: Crab meat or abalone may be substituted for the tuna.
