Ingredients

9 | Hard-boiled eggs -- peel | |
Shell | ||
3 | Scallions -- finely chopped | |
12 | ounces | Cn tuna-drained and flaked |
1½ | teaspoon | Dry mustard |
¾ | cup | Soy sauce |
1 | tablespoon | Sesame or peanut oil |
1½ | teaspoon | Lemon juice |
Salt and freshly ground | ||
Black pepper | ||
Paprika |
Directions
Slice eggs in half, lengthwise. Remove hardened yolks to a mixing bowl. Add scallions, tuna, mustard, soy sauce, oil, lemon juice, and salt and pepper to taste. Mix well. Fill egg white halves with tuna/egg yolk mixture. Sprinkle tops with paprika. Note: Crab meat or abalone may be substituted for the tuna.
