2 Eggs; hardboiled for 10-12 minutes (cool them in the refrigerator overnight before you peel them) (up to)
teaspoon Mayonnaise (or low-fat substitute)
¼ teaspoon Dry mustard
1 Scallion; minced
Salt & pepper to taste

Another variation for people who like marinated foods is to leave out the dry mustard and add chopped dill pickles and a little pickle juice. Leave the salad in your fridge overnight to develop FLAVOR (only works if you don't have a roommate, spouse, or significant other).
