Fish fillet with vidalia sweet onions

4 | Flounder fillets | |
1 | teaspoon | Salt, divided |
1 | teaspoon | Cider vinegar |
1 | cup | Water, divided |
4 | tablespoons | Butter |
2 | larges | Vidalia sweet onions, chopped |
2 | tablespoons | Flour |
½ | cup | Heavy or light cream |
Directions
Place fillets, ½ tsp salt, vinegar and water in shallow pan. Heat slowly, cover and steam for 8 to 10 minutes. Strain fish, reserving liquid; set fish aside. Melt butter and saute onions until golden. Do not brown. Add ½ cup water and ½ tsp salt. Add flour and stir well. Gradually add reserved liquid, stirring constantly. Remove from heat and add cream while stirring. Place fish in shallow dish. Cover with onion-cream mixture. Bake at 350 degrees for 10 minutes.
