NOTE: You should allow the ingredients to infuse themselves in this butter and release their full flavors. Now you'll cut up some Granny Smith Apples, red bell pepper and some peeled, seeded and coarsely chopped fresh tomatoes. Melt some of the compound butter and add the shallots, sauteeing them until translucent. Add the rest of the ingredients and cook until the apple and bell pepper are crisp/tender. If you want a more liquid sauce, add some dry white wine and just cook the alcohol. Adjust seasoning to your taste and top your grilled fish. MM Norma Wrenn npxr56b Sent to me by "Jack C.
