Fresh fruit in a cool ginger broth

Ingredients

Assorted Fruits Including: Peaches, Berrie, berries, kiwis, fresh currants, mango, etc. | ||
1 | cup | Pineapple juice |
Juice of 2 lemons (about 1/4 cup) | ||
3 | tablespoons | Honey |
2 | tablespoons | Grated fresh ginger |
⅓ | cup | Grand Marnier |
Directions
Peel and cut the fruit. Count out fruit yielding 4 portions; for example, 2 peaches would be plenty. In a saucepan combine pineapple juice, lemon juice, honey, ginger, and Grand Marnier. Bring quickly to a boil, reduce to a simmer, and cook 5 minutes before removing from the heat. Cool completely, either in an ice-bath or in the refrigerator. When ready to serve, assemble fruit onto plates or bowls. Ladle broth over fruit. Serve.
