Fresh fruit salad with orange vinagrette

Ingredients

3 tablespoons Avocado Oil
2 tablespoons Orange Juice
tablespoon White Wine Vinegar
½ teaspoon Orange Peel, finely grated
½ teaspoon Salt
Lettuce
1 medium Avocado, peeled & sliced
2 cups Fresh Fruit Slices or Chunks
Mint Leaves

Directions

Whisk oil, orange juice, vinegar, orange peel and salt in a bowl.

Line four salad plates with lettuce. Arrange avocado and other fruits on lettuce, dividing equally. Drizzle each serving with a generous tablespoon of vinaigrette.
