Spinach salad with orange dijon vinaigrette

Ingredients

3 tablespoons Vegetable Oil
3 tablespoons Orange Juice; Frozen Concentrate
1 tablespoon White Wine Vinegar
1 teaspoon Dijon Mustard
¼ teaspoon Salt
¼ teaspoon Pepper
4 cups Spinach Leaves Or Salad Greens, Fresh, Torn
4 cups Bibb Lettuce; Torn
2 cups Mushroom; Sliced

Directions

In large bowl, whisk together oil, orange juice concentrate, 1 tablespoon water, vinegar, mustard, salt and pepper. Just before serving, add spinach, Bibb lettuce and mushrooms; toss to combine. Makes 4 servings. Per serving: 142 cals, 4 g pro, 11 g total fat, 10 g carb, 3 g fibre.
