Fresh lima beans w/orange, apple, and roasted garlic

Ingredients

Quantity Ingredient
2 cups Shelled lima beans
1 cup Orange juice
1 tablespoon Brown sugar
1 teaspoon Roasted Garlic Puree
(see pg 181)
2 larges Oranges
Peeled and segmented
1 large Granny Smith apple, peeled
Cored and finely grated
1 tablespoon Basil leaves, shredded

Directions

Place the lima beans in a wide, shallow saute pan large enough to hold the beans in a single layer. Add the orange juice, sugar, and garlic puree and bring to a boil over medium-high heat. Cook until 90% of the liquid has evaporated and the lima beans have a sugar-orange glaze.

Remove from the heat and place the beans in a mixing bowl with the remaining ingredients. Divide among 6 plates and serve as an appetizer or side dish.
