Fresh lime ice cream

Quantity Ingredient
1 tablespoon + 1 tsp grated lime zest
½ cup + 1 tbsp fresh lime juice
2 cups Sugar, preferable superfine
pinch Salt
2 cups Heavy cream
2 cups Milk

Directions

Combine the zest, juice, sugar and salt. Stir to mix well.

Gradually add the cream and then the milk. Stir gently until sugar dissolves. Cover and refrigerate for at least 4 hours, or preferably overnight to allow the flavours to blend.
