Fruit and nut rice salad

4 | Spring onions; sliced diagonally | |
½ | Green pepper; deseeded and sliced | |

50 | grams | Raisins; (2oz) |
50 | grams | Cashew nuts; (2oz) |
15 | grams | Flaked almonds; (1/2) |
4 | tablespoons | Orange juice |
1 | tablespoon | White wine vinegar |
1 | tablespoon | Oil |
1 | pinch | Nutmeg |
Salt and freshly ground black pepper |
Directions
FOR THE DRESSING
1. Place all the salad ingredients in a bowl and mix well.
2. In a separate bowl mix all the dressing ingredients together.
3. Pour the dressing over the salad, mix thoroughly and transfer to a serving dish.
