Fruit and nut rice salad

Ingredients

1 125 gram lon grain and wild rice mix; cooked and cooled
; (4oz)
1 298 gram can mandarin orange segments; drained (101/2 oz)
4 Spring onions; sliced diagonally
½ Green pepper; deseeded and sliced
; into 2.5cm (1inch)

50 grams Raisins; (2oz)
50 grams Cashew nuts; (2oz)
15 grams Flaked almonds; (1/2)
4 tablespoons Orange juice
1 tablespoon White wine vinegar
1 tablespoon Oil
1 pinch Nutmeg
Salt and freshly ground black pepper

Directions

FOR THE DRESSING

1. Place all the salad ingredients in a bowl and mix well.

2. In a separate bowl mix all the dressing ingredients together.

3. Pour the dressing over the salad, mix thoroughly and transfer to a serving dish.
