Fruit truffles

Quantity | Ingredient | |

2 | cups | Dried fruit e.g. apricots; pears, raisins |
2 | tablespoons | Brandy |
½ | cup | HIGHLANDER Lite |
¾ | cup | Plain biscuits |
½ | cup | Desiccated coconut |
Directions
Place fruit in food processor bowl. Process until very finely chopped.
Add brandy and stand 1 hour.
Combine fruit mixture with HIGHLANDER Lite and biscuit crumbs. Mix thoroughly.
Shape into small balls and roll in coconut. Chill until firm. Store, covered in refrigerator.
