Fruit tzimmes -- compote

Ingredients

Quantity Ingredient
1 pounds Prunes
½ pounds Dried apricots
½ pounds Dried pears or apples
2 cups Water
2 tablespoons Honey
3 tablespoons Brown sugar
¼ teaspoon Salt
½ teaspoon Cinnamon
½ pounds Sweet potatoes, peeled and sliced

Directions

In a large mixing bowl, presoak all the fruit overnight. Drain the water.

Pit the prunes. In a medium sized saucepan combine all the ingredients and bring to a boil. Cook over very low heat for 25 minutes or until the liquid is absorbed. Stir occasionally. Serves 8 or more.
