Ggolden hash brown potatoes and zucchini^

Ingredients

2 larges Potatoes, peeled and
Shredded
1 medium Zucchini, shredded
1 medium Onion, grated
2 Egg whites
OR
cup Egg Beaters
cup Matzo meal
4 teaspoons Low sodium soy sauce

Directions

Drain vegetables very well. Combine with remaining ingredients. Cook in a slillet sprayed with Pam until brown and crusty.
