Gigi's red bean and rice

3 | pounds | Ham hocks |

1 | Maui onion; chopped | |
3 | Cloves garlic; pressed | |
½ | Green pepper; chopped | |
1 | small | Chili pepper; chopped fine |
1 | teaspoon | Brown sugar |

Wash and soak beans overnight. Place first six ingredients in large pot and bring to a boil. Add remaining ingredients and simmer for 3-4 hours.
